Couscous with Maria


Last week me and Maria we did a cooking afternoon. It was sort of a Barter system thingy we did. I showed Maria some simple dishes and she took some amazing pictures. It was real fun. Here is how we made our Couscous: Here is what you will need for 4 people

Ingredients: - 2 Cups Couscous - 3 and half cups boiling water - 1/2 tsp of salt - about 1 tsp of curry powder (any one by choice) - good glog of olive oil Method: 1. First of all put the water to boil, take almost 4 cups because some of the water will evaporate while boiling. 2. Take the couscous in a salad bowl, add the salt and curry powder to it and mix it well. 3. Now add the boiling water and olive oil on the couscous, stir it well and let it sit covered for about 10-15 minutes. In this time prepare the condiments. Condiments: here is what we took: - 1 block of Feta cheese cut into cubes (250 gms) - half red capsicum cut into small cubes - half cucumber, deseeded and cut into cubes - handful of sun dried tomatoes, cut into cubes - half red chillis, finely chopped - handful of black or green olives chopped - salt and black pepper to taste - again a good glog of olive oil - juice of one Lemon or Lime or to taste - handful of chopped fresh parsley and coriander (fresh mint can also be substituted) Method: 1. Prepare the vegetables as described above and in this time while you were preparing the veggies the couscous would have swelled nicely. 2. Loosen it with a fork and add all the prepared veggies to it. 3. Mix them all with a salad spoon and let it sit for an hour or so for the flavours to work. 4. This salad is great for summer parties, for picnics, for school lunch boxes. It can very well be prepared in advance a day before.
