Indian chai/tea

Indian chai has become very popular everywhere over the years and I love it too. I start my day with a cup of either Assam or Darjelling Chai.

Ingredients (for 1 cup) :

  • 3/4 cup water and a little more

  • 1/4 cup milk

  • 1 tsp sugar or more/less

  • 1 pinch chai masala

  • 1 small piece ginger

  • 1 green cardamom crushed

  • 1 tsp black tea

Preparation :

  1. Add the water to heat in a pan, crush all the spices and add it to the water.

  2. When the water starts to boil, add black tee and sugar.

  3. Let it boil for a minute and then add the milk.

  4. Boil the whole mixture for a minute or so and sieve it through a fine sieve.

  5. Enjoy hot.

PS: After adding the milk to the Pan, keep a watch on the Pan as the boiling milk can run out of the pan. You can change the spices according to your taste.

Indian Chai comes out best with Assam tea which has more color and on the other hand Darjelling which is a very expensive tea, has lot more flavour but less color.
