Peanut Chutney This peanut chutney is really delicious and easy to make. You can use it in many ways. I eat it with upma, as a base for falafel, or in a pita sandwich. I also use it as a vegetarian dip. It is very rich in protein and therefore good for children. What you need :
Ingredients:
1 cup peanuts ½ cup water 1 green chili, finely chopped salt 2 teaspoons yogurt or cottage cheese some curry leaves 1 handful fresh coriander ½ teaspoon cumin seeds ½ teaspoon oil 1 piece fresh ginger
Preparation:
Roast the peanuts over medium heat in a Pan, add ½ cup of water, and let it cook for 1 minute.
Mix the peanuts with the coriander, ginger, and cumin half the curry leaves, and half the chopped chili.
Add yogurt if it's too dry.
Put the mixture in a bowl and add the rest of the yogurt.
Heat oil in a small pan, add cumin seeds, green chili, and the rest of curry leaves, mix well and serve.
Caption: You can also use already roasted peanuts, but roasting the peanuts yourself and boiling them in water gives the chutney a creamy and roasted flavor.
